Almond flour cream cheese pancakes (Keto Friendly)

One thing my husband and I have really been missing during this keto diet is pancakes. So I did some research and located this recipe for almond flour pancakes made with cream cheese (link below). The author of this article did the testing of pancake recipes for us so we didn't have to go through the horrors of awful pancakes. I agree with them when they say this is the best way to make pancakes and keep in line with the keto diet.

I will forewarn you, with this recipe the pancakes have more of a cornbread texture than a fluffy bread-like texture. This is because almond flour is way more dense than regular flour.


INGREDIENTS:

  • 2 large eggs

  • 1 tablespoon water

  • 2 oz. cream cheese, cubed

  • 2/3 cup almond flour

  • 1 teaspoon baking powder

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon stevia sweetener

  • Butter and syrup (sugar free syrup for keto friendly)

DIRECTIONS:

  1. Add all ingredients to blender (I just mixed them in a bowl and mixed with an electric mixer, same difference). Start with eggs and water and cream cheese so you don't have anything get stuck at bottom.

  2. Blend until smooth, scraping down the sides if needed. Let batter sit for 2 minutes.

  3. Heat a non-stick skillet to medium heat. For each pancake, pour 3 to 4 tablespoons of batter onto skillet.

  4. Once you start to see little bubbles form, flip and continue to cook until pancake is browned on each side. Continue until you have used all pancake batter.

  5. Serve pancakes topped with butter and syrup!
