Bacon and egg avocados (Keto friendly)

These were pretty good, if I did it again I’d probably top with sour cream to give it that extra creaminess it needs!


Ingredients:

  • Muffin pan

  • 2 avocados

  • 4 eggs

  • Shredded mozzarella cheese

  • Salt and pepper

  • Cooked bacon

Directions:

  1. Slice avocados in half to place the egg inside. You will have to dig out a spoonful to make room for the egg and to enjoy later.

  2. Crack egg inside the avocado hole

  3. Sprinkle with salt and pepper

  1. Sprinkle cheese and cooked bacon on top (turkey bacon or bacon bits are alternatives)


  1. Bake in oven for 20 minutes at 350 degrees

  2. Grab a spoon and eat!
