Corndog Muffins - Kids love it!

This week our law firm had a potluck and I had no idea what to make. I saw these on Pinterest and thought it was just my style: easy and cheap (in a labor and financial reference lol).
This is something you can throw together for any event and even for the kiddos. My daughters loved them and can easily help make them! They went pretty fast at the office party as well and I continued to see coworkers grabbing them even after the party completed as a late snack at their desks.
I didn’t get to enjoy these due to my Keto diet but I heard they tasted great!
Ingredients:
Muffin Pan
Cupcake sleeves
An electric mixer
1 bowl
2 boxes of Jiffy cornbread
2 eggs
1 tablespoon of canola oil
1 cup of milk (your preference)
1 tablespoon of sugar
2 hotdogs (your preference, I used turkey)
Directions:
In your bowl pour in Jiffy cornbread along with eggs, oil, milk and sugar
Mix well with an electric mixer on medium – make sure all the lumps are dissolved
Pour mixture into cupcake sleeve in muffin pan about 2/3 full
Cut up hot dogs about an inch in length pieces
Place 1 piece into each muffin mix
Bake for 12 minutes on 350 degrees
Let stand for 10 minutes before enjoying
So easy, so cheap, so good!
