Cloud bread aka Oopsie bread (Keto friendly)

The hardest part for me of being on a keto diet is the lack of bread. I love bread! So, I was shared with this “cloud bread” or “oopsie bread” that I can use as an alternative. It’s quite amazing actually. It’s not really bread at all, but eggs and cream cheese.
They come out really fluffy and though it doesn’t really taste like bread, I believe it’s purpose it so replace bread in the capacity of sandwiches and food holders like tacos. Check this out…
Ingredients:
2 bowls
An electric mixer
Cookie sheet
Parchment paper
3 eggs
3.5 tablespoons of cream cheese
1/8 of cream of tartar
A pinch of salt
Directions:
Separate the egg yolks from the egg whites and place the egg yolks in one bowl and the egg whites in another (you can do this by cracking the egg in your hand and using your fingers to wiggle out the yolk, it should come apart easily)
Pour in the cream of tartar in the egg while bowl
Mix on high with an electric mixer
The egg whites should become foamy, like the top of a lemon meringue pie
Put in the cream cheese into the yolk bowl with a pinch of salt and mixed that as well (will work easier if the cream cheese was left out at room temperature a bit to soften it up)
Pour in half of the egg white foam into your cream cheese mixture and fold into each other
Pour in the other half and do the same
This needs to be done in halves in order for it to keep its foamy texture
Spoon the mixture onto the parchment paper on a baking sheet
Bake for 20 minutes, on 300 degrees (recipes online call for 30 minutes but my oven cooks hot)
Voila! You have cloud bread! (or oopsie bread).
I like to eat these with butter on top (Kerrygold's grassfed butter) or top with cheese and turkey pepperoni for a mini pizza :-)
