Turkey Taquitos

I think it's safe to say that we're all in the same boat when it comes to Thanksgiving leftovers, sometimes there is just too much left. I had a whole extra turkey left and found myself trying to figure out what to do with it, aside from feeding our dog some good treats.
For the past few weeks I've been craving chicken taquitos...of course! Let's make taquitos with the turkey left over!
They came out fantastic! I made them with turkey and cheese, yum! Not to mention it's another cheap recipe with few ingredients and who doesn't love that?
Ingredients:
Corn tortillas
Shredded turkey
Shredded cheese (your choice)
Oil (I used canola oil)
Directions:
Heat up oil in a pan, enough to coat the pan.
You'll want to coat the corn tortillas in the oil BEFORE you stuff and roll them with turkey and cheese. I didn't understand why at first but if you try to roll them prior to frying them, you'll find they'll tear apart.
Place tortilla in hot oil for about 5 seconds on each side then pull out and place on plate with paper towels
Once your tortillas have all been oiled, begin placing shreds of turkey and shredded cheese at the edge of the tortilla
Pour in some more oil in pan to be heated, you'll want about 5 tablespoons in the pan at all times
Roll the tortillas up and place on the hot oil for about a minute on each side.
If you have trouble keeping your taquitos rolled up, you can use a toothpick to keep them in place.
Eat!!! Nom nom!
