Eating on a Budget for a Greater Cause

The Rector’s are trying to buy a house! We have finished building our family of 6 and are now ready for more space and a place to truly call our own. We’ve worked extremely hard to build our credit and get our finances straight. We’ve also had to save money for a down payment, option fee, inspection, appraisal and any other fees that come with buying a home. This has resulted on some extreme budget grocery shopping!


My husband and I both know what’s it’s like to eat on a budget. We both grew up having to fend for ourselves for the most part and he and I also moved out when we were teenagers after having our oldest daughter. He was 19 and I was 17. We had to know how to really stretch a dollar.


In time, we grew and advanced in our world climbing the ladder to better jobs and increased income. So, let’s just say we weren’t shy to the occasional steak and date nights. We were living and eating comfortably. There’s nothing wrong with that, if you got it, eat it!


Here recently, our main goal has been to purchase a home. By choice, we rented a small 3-bedroom, 1 bath house that is under 1000 square feet. That is not very big for 6 people. But the rent was cheap and it enabled us to save the money we needed to get to the goal we wanted to achieve. Even if this meant squeezing every penny out of our paychecks.


We needed to dig back to our past in the way that we ate. The meals may not be ideal, but we’re fed and we are doing this for something greater, the Rector home.

Below is a list of the type of food that has kept our bellies full:

Noodles

Rice, chili & cheese

Waffles

Fideo with ground turkey with beans and cheese (this comes from my Mexican roots)

Tuna salad

Turkey sandwich with cheese

Grilled cheese

Peanut butter and jelly sandwiches

Cereal

Hamburger Helper

Spaghetti

Fish Sandwiches

Eggs

These items can be purchased from about $40 to $50. Yep, we can make that happen believe it or not. We will make you the most gourmet bowl of noodles you've ever had! Well, Leroy can. He seems to be a mastermind when it comes to different ways to enhance a bowl of noodles.


As anyone would, we can get pretty bored with what we eat. But all of that will not matter once we get to the end result! So tell me, what are your go to budget-friendly meals? Maybe we can borrow some ideas :-)
